Helming the kitchen at Mott 32 Hong Kong is Executive Chef Lee Man Sing.

Chef Lee earned his executive position from the flagship Mandarin Oriental and received two Michelin Stars for the restaurant by creating a gastronomic Cantonese menu. As a highly respected Cantonese Chef in the industry and well known amongst the Chinese culinary scene, Chef Lee Man Sing has achieved numerous accolades from the Hong Kong Tourism Board, including “Best of the Best Culinary Award 2006 and 2009”, where he was awarded twice in this category. He was also appointed as a member of the Hong Kong Chinese Chefs Association and one of the judging panels for HOFEX.

Culinary Director Malcolm Wood and Chef Lee have teamed up to create the Mott 32 menu with their combined years of experience. Malcolm Wood spent his younger years living in Taiwan before moving to Hong Kong and has always been passionate about the traditional recipes of Chinese home cooking that have been passed down through generations. This proved a winning combination with Chef Lee’s talent for producing some of  Hong Kong’s favourite dishes.

Chef Lee takes pride in understanding each ingredient as he adapts a contemporary approach when recreating authentic Chinese cuisine by sourcing fresh ingredients. “I usually source fresh ingredients from sustainable producers to maintain the quality of the food from both local and overseas suppliers “ says Chef Lee. The menu at Mott 32 perfectly illustrates Chef Lee Man Sing’s masterful skills in creating authentic Chinese dishes.

Chef Lai is the Head Chef for Mott 32 Vancouver.

With over 44 years of experience working in Chinese kitchens, both in Hong Kong and in Vancouver, Chef Lai has become a well respected chef within the culinary community.

Beginning his career in Hong Kong, Chef Lai started from the bottom and excelled in every position within the kitchen learning many different culinary techniques along the way. In 1982, Chef Lai moved to Vancouver, bringing his authentic Hong Kong experiences with him to open up a new Chinese restaurant in the city.

Chef Lai’s understanding of Chinese cuisine, including superior knowledge on difficult cooking techniques, allows him to bring out the pure taste of ingredients within dishes. With access to the highest quality local ingredients and his knowledge of authentic fundamental Chinese cooking, Chef Lai will create a journey of outstanding taste for guests who dine at Mott 32 Vancouver.
